Recipe for Smothered Pork Chops
Ingredients:
- 4 bone-in or boneless pork chops
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 cup (60g) all-purpose flour (for dredging)
- 2 tablespoons (30ml) olive oil or butter
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 cups (480ml) chicken or beef broth
- 1/2 cup (120ml) heavy cream (optional for creamier gravy)
- 1 tablespoon (8g) cornstarch mixed with 2 tablespoons water (optional, for thickening)
Instructions:
- Season the Pork Chops: Pat the pork chops dry and season both sides with salt, pepper, and garlic powder. Dredge them lightly in flour, shaking off the excess.
- Sear the Chops: Heat olive oil or butter in a large skillet over medium-high heat. Sear the pork chops for 3–4 minutes on each side until golden brown. Remove from the skillet and set aside.
- Cook the Onion and Garlic: In the same skillet, add the chopped onion and cook until softened (about 2–3 minutes). Add the minced garlic and cook for another 30 seconds.
- Make the Gravy: Gradually whisk in the broth, scraping up any browned bits from the skillet. Simmer for 5 minutes, then stir in the heavy cream if using.
- Return the Chops: Place the pork chops back in the skillet, spooning some gravy over them. Reduce the heat to low, cover, and simmer for 15–20 minutes, or until the pork chops are tender and fully cooked (145°F/63°C).
- Thicken the Gravy: If desired, stir in the cornstarch slurry and cook for an additional 2–3 minutes until the gravy thickens.
- Serve: Serve the smothered pork chops hot, garnished with fresh parsley, alongside mashed potatoes or rice.
