Instructions:

  1. Heat the Milk:
    • Pour the milk into a saucepan and heat over medium-low heat until it reaches 180°F (82°C). Stir occasionally to prevent scorching.
    • If you don’t have a thermometer, heat until the milk is steaming but not boiling.
  2. Cool the Milk:
    • Remove the milk from the heat and let it cool to 110°F (43°C).
    • To check without a thermometer, dip your finger—it should be warm but not too hot to touch.
  3. Add the Starter Yogurt:
    • In a small bowl, mix 2 tablespoons of plain yogurt with a few tablespoons of the warm milk to thin it out.
    • Add this mixture back into the pot and stir gently.
  4. Incubate the Yogurt:
    • Pour the milk mixture into clean glass jars and cover them with lids or plastic wrap.
    • Place the jars in a warm place (such as an oven with the light on or wrapped in a towel) and let them sit undisturbed for 6–12 hours.
    • The longer the incubation, the tangier the yogurt will be.
  5. Chill & Serve:
    • Once set, refrigerate the yogurt for at least 2 hours before serving.
