Step-by-Step Instructions
Prepare the Vegetables
- Grate the potatoes and carrots using a coarse grater.
- Place them in a clean kitchen towel and squeeze very well to remove excess liquid.
This step is key to crispy fritters.
Make the Batter
- In a large bowl, add:
- grated potatoes
- grated carrot
- chopped onion
- parsley or green onion
- Add eggs and mix well.
- Add flour, cornstarch, cheese, and all spices.
- Mix until you get a thick, sticky mixture (not watery).
If the mixture feels too loose, add 1 more tablespoon of flour.

Heat the Oil
- Heat a non-stick pan over medium heat.
- Add enough oil to lightly coat the bottom of the pan.
- Oil should be hot but not smoking.
Fry the Fritters

- Place in the pan and gently flatten.
