Ingredients

  • 1½ cups chopped nuts (peanuts, almonds, or pecans work great)
  • 1½ cups crispy cereal (cornflakes or rice cereal)
  • ¾ cup soft caramels, unwrapped
  • 2 tablespoons heavy cream or milk
  • 1½ cups semi-sweet chocolate chips
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Prepare the base
    In a large bowl, mix the chopped nuts and crispy cereal. Set aside.
  2. Melt the caramel
    In a small saucepan over low heat, melt the caramels with the cream, stirring constantly until smooth.
    Stir in vanilla and a pinch of salt.
  3. Coat the crunch
    Pour the warm caramel over the nut-cereal mixture. Gently stir until everything is evenly coated.
  4. Form clusters
    Scoop spoonfuls of the mixture onto a parchment-lined baking sheet. Press lightly to shape.
  5. Melt the chocolate
    Melt chocolate chips in the microwave (30-second intervals) or over a double boiler until smooth.
  6. Dip & drizzle
    Spoon or dip each cluster in melted chocolate, then drizzle extra chocolate on top for that bakery look.
  7. Set
    Refrigerate for 20–30 minutes until firm.
