Ingredients
For the Blueberry Loaf:
1½ cups all-purpose flour
1 tsp baking powder
½ tsp salt
½ cup butter, softened
¾ cup sugar
2 large eggs
1 tsp vanilla extract
½ cup milk or yogurt
1 cup fresh or frozen blueberries (tossed with 1 tsp flour)
For the Cream Cheese Filling:
8 oz cream cheese, softened
¼ cup sugar
1 egg
½ tsp vanilla extract
How to Make It
Preheat oven to 350°F (175°C). Grease and line a loaf pan.
In a bowl, whisk flour, baking powder, and salt. Set aside.
Cream butter and sugar until light and fluffy.
Add eggs one at a time, then vanilla.
Mix in dry ingredients alternately with milk/yogurt until just combined.
Gently fold in blueberries.
In another bowl, beat cream cheese, sugar, egg, and vanilla until smooth.
Pour half the batter into the pan. Spoon cream cheese mixture over it.
Top with remaining batter and lightly swirl with a knife.
