Herb-Roasted Garlic Pork Chops with Baby Potatoes is a comforting yet elegant one-pan meal that’s perfect for both busy weeknights and relaxed weekend dinners. Juicy pork chops are seasoned with fragrant herbs and roasted alongside tender baby potatoes and whole garlic cloves, allowing everything to soak up rich, savory flavors. Ingredients:
4 bone-in or boneless pork chops
1½ lbs baby potatoes, halved
4 cloves garlic, minced
1 teaspoon dried rosemary
1 teaspoon dried thyme
1 teaspoon dried parsley
1/2 teaspoon paprika
Salt and black pepper, to taste
3 tablespoons olive oil
Instructions:
Preheat oven to 400°F (200°C). Lightly grease a large baking dish or sheet pan.
In a bowl, toss baby potatoes with half of the olive oil, salt, and pepper. Spread them evenly in the baking dish.
In a small bowl, mix garlic, rosemary, thyme, parsley, paprika, remaining olive oil, salt, and pepper.
Rub the herb-garlic mixture generously over both sides of the pork chops.
Place pork chops on top of the potatoes.
Roast uncovered for 35–40 minutes, flipping pork chops halfway through, until pork reaches an internal temperature of 145°F (63°C) and potatoes are fork-tender.
Remove from oven and let rest for 5 minutes before serving.
