Recipe:
Ingredients:
- For the biscuits:
- 2 cups (250g) all-purpose flour
- 1 tbsp baking powder
- 1 tsp salt
- 1 tbsp granulated sugar
- 1/2 cup (1 stick) cold unsalted butter, diced
- 3/4 cup cold milk
- 1 1/2 cups shredded mozzarella or any cheese of your choice (for stuffing)
- For the garlic butter topping:
- 2 tbsp melted butter
- 1 clove garlic, minced
- 1 tbsp fresh parsley, chopped
- Pinch of salt
Instructions:
- Prepare the dough:
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Whisk together the flour, baking powder, salt, and sugar in a large mixing bowl.
- Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Add the milk:
- Gradually pour in the cold milk, stirring gently until the dough comes together. Be careful not to overmix.
- Shape the biscuits:
- Turn the dough onto a lightly floured surface and roll it out to about 1/2-inch thickness.
- Use a round cutter or the rim of a glass to cut out circles. Place a small portion of cheese in the center of each circle.
- Fold the edges of the dough around the cheese, pinching to seal, and shape into balls.
- Bake:
- Place the stuffed dough balls seam-side down on the prepared baking sheet.
- Bake for 12-15 minutes until the tops are golden brown.
- Prepare the garlic butter topping:
- While the biscuits are baking, mix the melted butter, minced garlic, parsley, and salt in a small bowl.
- Finish and serve:
- Once the biscuits are out of the oven, brush the tops with the garlic butter mixture while they are still warm.
- Serve hot and enjoy the gooey, cheesy goodness!
