Recipe: Creamy Homemade Yogurt
Ingredients:
- 1 liter (4 cups) whole milk
- 2 tablespoons plain yogurt with live cultures (as a starter)
- 2 tablespoons sugar (optional)
- 1 teaspoon vanilla extract (optional)
Instructions:
- Heat the Milk:
- Pour the milk into a saucepan and heat over medium-low heat until it reaches 180°F (82°C). Stir occasionally to prevent scorching.
- If you don’t have a thermometer, heat until the milk is steaming but not boiling.
- Cool the Milk:
- Remove the milk from the heat and let it cool to 110°F (43°C).
- To check without a thermometer, dip your finger—it should be warm but not too hot to touch.
- Add the Starter Yogurt:
- In a small bowl, mix 2 tablespoons of plain yogurt with a few tablespoons of the warm milk to thin it out.
- Add this mixture back into the pot and stir gently.
- Incubate the Yogurt:
- Pour the milk mixture into clean glass jars and cover them with lids or plastic wrap.
- Place the jars in a warm place (such as an oven with the light on or wrapped in a towel) and let them sit undisturbed for 6–12 hours.
- The longer the incubation, the tangier the yogurt will be.
- Chill & Serve:
- Once set, refrigerate the yogurt for at least 2 hours before serving.
