Ingredients:

- 1/2 cup (115 g) unsalted butter, melted
- 2 cups (500 ml) lukewarm milk
- 4 eggs, separated
- 3/4 cup (150 g) granulated sugar
- 1 tbsp water
- 1 tsp vanilla extract
- 1/2 cup (60 g) all-purpose flour
- Zest of 1 lemon
- Juice of 1 lemon
- A pinch of salt
- Powdered sugar, for dusting
- Lemon slices, for garnish (optional)
Instructions:
- Preheat & Prep:
Preheat your oven to 325°F (160°C). Line a round or square cake pan with parchment paper and lightly grease the sides. - Whip Egg Whites:
In a clean bowl, beat egg whites with a pinch of salt until stiff peaks form. Set aside. - Make Batter Base:
In a large mixing bowl, beat the egg yolks with sugar and 1 tbsp water until light and fluffy. Add melted butter and mix well. Then, add the lemon zest, juice, and vanilla. - Incorporate Flour & Milk:
Mix in the flour until smooth. Gradually whisk in the lukewarm milk until fully combined — the batter will be very runny (that’s normal!). - Fold in Egg Whites:
Gently fold in the egg whites in batches. It’s okay if a few white lumps remain—this helps create the layered effect. - Bake:
Pour the batter into the prepared pan and bake for 50–60 minutes, or until the top is golden and the center has a slight jiggle when shaken. - Cool & Chill:
Let the cake cool completely in the pan, then chill for at least 2 hours (overnight is best) to fully set the custard layer. - Serve:
Dust with powdered sugar and garnish with fresh lemon slices before serving.
