Introduction:
Indulge in the comforting flavors of this homemade tapioca pudding! This classic dessert is rich, creamy, and textured with delightful pearls of tapioca. Perfectly sweetened with a hint of vanilla, it’s an old-fashioned recipe that never goes out of style. Serve it warm or chilled for a satisfying treat.
Recipe:
Ingredients:
- 1/2 cup small tapioca pearls
- 2 1/2 cups milk (whole milk recommended)
- 1/2 cup heavy cream
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 2 large eggs
- 1 teaspoon vanilla extract
Instructions:
- Soak the Tapioca: Rinse the tapioca pearls and soak them in water for 30 minutes. Drain and set aside.
- Cook the Tapioca: In a medium saucepan, combine the soaked tapioca, milk, heavy cream, sugar, and salt. Cook over medium heat, stirring constantly, until the mixture comes to a gentle simmer. Reduce heat to low and continue cooking for 10–15 minutes, stirring frequently, until the tapioca pearls turn translucent and tender.
- Prepare the Egg Mixture: In a small bowl, whisk the eggs. Gradually add 1/4 cup of the hot tapioca mixture to the eggs, whisking constantly to temper them and prevent curdling.
- Combine and Thicken: Slowly pour the tempered egg mixture back into the saucepan with the tapioca. Stir constantly over low heat for 2–3 minutes, or until the pudding thickens to your desired consistency.
- Add Vanilla: Remove from heat and stir in the vanilla extract for a fragrant finish.
- Serve: Pour the pudding into individual bowls or a serving dish. Let it cool slightly before serving warm, or refrigerate for a few hours to enjoy it chilled. Optionally, garnish with a sprinkle of cinnamon or a dollop of whipped cream.
