These crispy roasted potato discs are a simple yet flavorful side dish that pairs perfectly with any main course. Soft on the inside and golden-brown on the outside, these potatoes are infused with the earthy flavors of rosemary and garlic. They’re easy to prepare and make for a delicious accompaniment to your meals or a snack on their own.

Recipe:

Ingredients:

  • 4–5 large potatoes, peeled and sliced into thick discs
  • 3 tbsp olive oil
  • 3–4 cloves garlic, whole or slightly crushed
  • 2 sprigs fresh rosemary
  • Salt and pepper to taste
  • 1 tsp paprika (optional, for added flavor)
  • Butter (optional, for extra richness)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 200°C (400°F).
  2. Prepare the Potatoes:
    • Peel the potatoes and slice them into thick, even discs.
    • In a large bowl, toss the potato slices with olive oil, salt, pepper, and paprika (if using). Ensure all slices are evenly coated.
  3. Arrange in a Baking Dish:
    • Place the potato discs in a single layer on a baking sheet or oven-safe skillet.
    • Add whole garlic cloves and sprigs of rosemary around the potatoes for an infusion of flavor.
  4. Roast the Potatoes:
    • Place the baking sheet in the preheated oven and roast for 35–40 minutes, flipping the potatoes halfway through, until they are golden brown and crispy on the outside, but soft on the inside.
    • For extra crispiness, you can boil the potatoes for an additional 2–3 minutes at the end.
  5. Add Butter (Optional):
    • If you want an extra layer of richness, add small dabs of butter over the potatoes in the last 5 minutes of roasting.
  6. Serve:
    • Remove the potato discs from the oven and serve hot. Garnish with additional fresh rosemary and roasted garlic if desired.

Enjoy these crispy, flavorful potato discs as a side dish with meats, or simply as a delightful snack on their own!
