Ingredients:
For the biscuits:
- 2 cups all-purpose flour
- 1/2 cup finely chopped walnuts
- 1/4 cup powdered sugar
- 1/2 cup unsalted butter, chilled and cubed
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1/4 cup heavy cream (plus extra if needed)
For the walnut cream filling:
- 1/2 cup unsalted butter, softened
- 1 cup powdered sugar
- 1/4 cup finely chopped walnuts
- 2 tbsp heavy cream
- 1 tsp vanilla extract
For the frosting:
- 1 1/2 cups powdered sugar
- 2-3 tbsp milk
- 1/2 tsp vanilla extract
- 1/4 cup finely chopped walnuts (for topping)
Instructions:
- Prepare the Biscuits:
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, combine flour, chopped walnuts, powdered sugar, and salt.
- Add chilled butter and use a pastry cutter (or your fingers) to rub the butter into the dry ingredients until the mixture resembles coarse crumbs.
- Add vanilla extract and heavy cream, mixing gently until a dough forms. If needed, add a little more cream to bring the dough together.
- Roll the dough out on a lightly floured surface to about 1/4 inch thickness. Cut out biscuits using a round cookie cutter.
- Place biscuits on the baking sheet and bake for 12-15 minutes, or until lightly golden around the edges. Let them cool completely on a wire rack.
- Make the Walnut Cream Filling:
- In a bowl, cream together softened butter, powdered sugar, and vanilla until light and fluffy.
- Mix in the chopped walnuts and heavy cream, and beat until smooth. Adjust the consistency with more cream if needed.
- Assemble the Biscuits:
- Once the biscuits are cool, spread a generous amount of walnut cream filling on the flat side of one biscuit, and sandwich it with another biscuit. Repeat with remaining biscuits.
- Make the Frosting:
- In a small bowl, whisk together powdered sugar, vanilla, and milk until you get a thick but pourable consistency.
- Drizzle the frosting over the tops of the assembled biscuits and sprinkle with chopped walnuts.
- Serve:
- Allow the frosting to set before serving. These biscuits can be stored in an airtight container for up to 3 days.
