Ingredients

  • 3 cups old-fashioned oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon (optional)
  • 2 large eggs
  • 1/2 cup brown sugar
  • 1/4 cup honey or maple syrup
  • 1/4 cup melted butter or coconut oil
  • 1 1/2 cups milk (dairy or plant-based)
  • 2 teaspoons vanilla extract
  • Optional add-ins: chopped nuts, raisins, apple pieces, chocolate chips

Instructions

  1. Preheat Oven
Preheat your oven to 350°F (175°C). Grease an 8×8 or 9×9 baking dish.
  2. Mix Dry Ingredients
    In a large bowl, combine:
    • 3 cups oats
    • 1 tsp baking powder
    • 1/2 tsp salt
    • 1 tsp cinnamon (if using)
  3. Whisk Wet Ingredients
    In another bowl, whisk:
    • 2 eggs
    • 1/2 cup brown sugar
    • 1/4 cup honey or maple syrup
    • 1/4 cup melted butter
    • 1 1/2 cups milk
    • 2 tsp vanilla extract
  4. Combine
Pour wet mixture over oats and stir until fully combined. Let it rest for 5–10 minutes so oats soak up the liquid.
  5. Add Extras (optional)
Stir in nuts, fruit, or chocolate chips if you like.
  6. Bake
Transfer to prepared dish and bake 25–35 minutes, until golden on top and set in the center.
  7. Cool & Serve
Let cool slightly before cutting into squares. Drizzle with honey or yogurt on top!
