Ingredients:

  • 1 kg carrots, peeled and cut into chunks (or use baby carrots)
  • 4 tbsp butter
  • 4 tbsp honey
  • 3 tbsp brown sugar
  • 1 tsp vanilla extract (optional but amazing)
  • ½ tsp cinnamon (optional)
  • ½ tsp salt
  • ¼ tsp black pepper
  • Fresh parsley for garnish (optional)

Instructions:

1. Prepare the Carrots

  • Peel the carrots and cut them into even-sized pieces to ensure they cook evenly.

2. Make the Glaze

In a small saucepan, melt the butter over medium heat.
Add honey, brown sugar, salt, pepper, and vanilla extract (if using).
Stir until everything is melted and smooth.

3. Cook the Carrots

Option A — Stove Top:

  • Add carrots to a large pan.
  • Pour the honey butter glaze over them.
  • Cover and cook on medium heat for 15–20 minutes, stirring occasionally, until the carrots are tender and the sauce has thickened.

Option B — Oven Baked:

  • Preheat oven to 200°C (400°F).
  • Toss carrots with the glaze and spread on a baking tray.
  • Roast for 20–25 minutes, flipping halfway, until golden and caramelized.

Option C — Slow Cooker:

  • Add carrots to the slow cooker.
  • Pour the glaze over them.
  • Cook on LOW for 4–5 hours or HIGH for 2–3 hours.

4. Finish & Serve

  • Let the glaze thicken slightly before serving.
  • Sprinkle with chopped parsley.
  • Serve warm and enjoy the sweet buttery flavor!
