Introduction:
A true Southern classic, this Butter Pecan Cake is rich, moist, and full of buttery flavor with crunchy toasted pecans throughout. Topped with a creamy frosting, it’s perfect for special occasions, birthdays, or whenever you want a decadent treat!
Ingredients:
- For the Cake:
- 1 cup (2 sticks) unsalted butter, softened
- 2 cups granulated sugar
- 4 large eggs
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup whole milk
- 1 cup chopped pecans, toasted
- For the Frosting:
- 1 cup (2 sticks) unsalted butter, softened
- 4 cups powdered sugar
- 1/4 cup heavy cream (or milk)
- 2 teaspoons vanilla extract
- 1/2 cup chopped pecans (optional, for topping)
Instructions:
- Prepare the Oven:
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper. - Toast the Pecans:
Spread the chopped pecans on a baking sheet and bake for 5–7 minutes, stirring once, until fragrant. Set aside to cool. - Make the Cake Batter:
- In a large bowl, cream the butter and sugar together until light and fluffy.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the creamed mixture, alternating with the milk. Begin and end with the dry ingredients.
- Fold in the toasted pecans.
- Bake the Cakes:
Divide the batter evenly between the prepared pans. Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean. Cool the cakes in the pans for 10 minutes, then transfer to a wire rack to cool completely. - Prepare the Frosting:
- In a large bowl, beat the softened butter until creamy.
- Gradually add the powdered sugar, one cup at a time, beating well. Add the heavy cream and vanilla extract, and beat until smooth and fluffy.
- Assemble the Cake:
- Place one cake layer on a serving plate. Spread a generous layer of frosting on top.
- Place the second cake layer on top and frost the sides and top of the cake.
- Sprinkle additional chopped pecans on top if desired.
- Serve and Enjoy:
Slice and serve this indulgent treat with a hot cup of coffee or tea!
