  • For the Cake:
    • 1 cup (2 sticks) unsalted butter, softened
    • 2 cups granulated sugar
    • 4 large eggs
    • 2 teaspoons vanilla extract
    • 3 cups all-purpose flour
    • 1 tablespoon baking powder
    • 1/2 teaspoon salt
    • 1 cup whole milk
    • 1 cup chopped pecans, toasted
  • For the Frosting:
    • 1 cup (2 sticks) unsalted butter, softened
    • 4 cups powdered sugar
    • 1/4 cup heavy cream (or milk)
    • 2 teaspoons vanilla extract
    • 1/2 cup chopped pecans (optional, for topping)

Instructions:

  1. Prepare the Oven:
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.
  2. Toast the Pecans:
Spread the chopped pecans on a baking sheet and bake for 5–7 minutes, stirring once, until fragrant. Set aside to cool.
  3. Make the Cake Batter:
    • In a large bowl, cream the butter and sugar together until light and fluffy.
    • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
    • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the creamed mixture, alternating with the milk. Begin and end with the dry ingredients.
    • Fold in the toasted pecans.
  4. Bake the Cakes:
Divide the batter evenly between the prepared pans. Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean. Cool the cakes in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  5. Prepare the Frosting:
    • In a large bowl, beat the softened butter until creamy.
    • Gradually add the powdered sugar, one cup at a time, beating well. Add the heavy cream and vanilla extract, and beat until smooth and fluffy.
  6. Assemble the Cake:
    • Place one cake layer on a serving plate. Spread a generous layer of frosting on top.
    • Place the second cake layer on top and frost the sides and top of the cake.
    • Sprinkle additional chopped pecans on top if desired.
  7. Serve and Enjoy:
Slice and serve this indulgent treat with a hot cup of coffee or tea!
