Spicy Steak Fajitas
Steak fajitas are a wonderful food to share during the cooler weather. I love to make this dish with a little extra kick when it gets cooler outside, just because mentally, I feel like I warm up from the inside out.
Steak Fajitas are a wonderful Mexican dish that can never be wrong. This dish includes peppers and onions, cheese and tender steak all rolled up into a tortilla.
During sport seasons, I love to have a pot of fajitas ready so that during the big game, people can help themselves when they are hungry. Of course, I always keep a large bowl of chips and a dish or two of salsa available for munching on.
Spicy Steak Fajitas
Ingredients
- 2 pounds sirloin steak, sliced into thin strips
- 1 red bell pepper sliced thin
- 1 yellow bell pepper sliced thin
- 1 green bell pepper sliced thin
- I large yellow onion, sliced thin
- 3 tbsp Olive Oil
- 1 tbsp lime juice
- ½ tsp chili powder
- 1 tsp ground cumin
- ⅛ tsp cayenne pepper
- 2 garlic cloves, minced
- 2 cups Mexican Blend cheese, shredded
- 6 to 8 tortillas
Instructions
FIRST STEP:
In a zip lock bag, place the sliced steak, the spices, the lime juice and the olive oil
Close the bag, shake to coat the pieces of steak
SECOND STEP:
Add the peppers and onions to the bag and reclose the bag
Shake the bag again to coat the vegetables
THIRD STEP:
Add 1 tbsp Olive oil to a skillet and add the ingredients from the bag into the heated skillet.
Cook until the vegetables are just becoming tender and the steak is cooked
FOURTH STEP:
Serve with warm tortillas , sprinkle with shredded cheese and your choice of optional toppings
