Ingredients:
2 lbs boneless, skinless chicken breasts or thighs
1 small onion, diced
2 cloves garlic, minced
2 cups chicken broth
1 can (10.5 oz) cream of chicken soup
1 cup milk or heavy cream
1 cup frozen peas and carrots
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon poultry seasoning
1/2 teaspoon dried thyme
2 tablespoons butter
1 can refrigerated biscuit dough, cut into quarters
Instructions:
Place chicken in the bottom of the crock pot. Add onion and garlic on top.
Pour in chicken broth, cream of chicken soup, and milk or cream.
Season with salt, pepper, poultry seasoning, and thyme. Add butter.
Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until chicken is tender.
Remove chicken, shred it with two forks, and return it to the crock pot.
Stir in frozen peas and carrots.
Add biscuit pieces evenly over the top.
Cover and cook on HIGH for 30–45 minutes, or until dumplings are cooked through and fluffy.
