Lemon Bars with Glaze Recipe
Ingredients:
For the Crust:
- 1 cup (226g) unsalted butter, softened
- ½ cup (100g) granulated sugar
- 2 cups (240g) all-purpose flour
- ¼ tsp salt
For the Lemon Filling:
- 4 large eggs
- 1½ cups (300g) granulated sugar
- ¼ cup (30g) all-purpose flour
- Zest of 2 lemons
- ½ cup (120ml) freshly squeezed lemon juice
For the Lemon Glaze:
- 1 cup (120g) powdered sugar
- 2–3 tbsp fresh lemon juice (adjust for consistency)
Instructions:
- Preheat Oven & Prepare Pan
Preheat your oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper or lightly grease it. - Make the Crust
In a bowl, cream together the butter and sugar until smooth. Mix in the flour and salt until combined. Press the dough evenly into the prepared pan.
Bake for 18–20 minutes or until lightly golden. Set aside. - Prepare the Lemon Filling
In another bowl, whisk the eggs, sugar, and flour until smooth. Stir in lemon juice and zest.
Pour the mixture over the pre-baked crust. - Bake Again
Return the pan to the oven and bake for 20–25 minutes, or until the center is set and no longer jiggly. Cool completely. - Add the Glaze
Whisk together powdered sugar and lemon juice until smooth and pourable. Spread over the cooled lemon bars. - Chill & Cut
Let the glaze set in the fridge for at least 30 minutes before slicing into squares.
